Coffee By WBC Champion Hidenori Izaki

It was our honor to have co-hosted a workshop by Mr Hidenori Izaki in our cafe on 11 April 2017.

Hidenori Izaki has won the 2014 World Barista Championship in Rimini, Italy. It was the first win for a Japanese competitor on the World Barista Championship stage, and also the first win for a barista competitor from Asia.

During the event, Hidenori shared with audience the importance of managing temperature to yield optimum cup of coffee. It was demonstrated using Victoria Arduino Black Eagle VA388 and Mythos One.

The session was followed by Q&A with audience.

We were exhilarated to have won 2nd runner up at Manual Brewing Competition at The Thirty-Six.

Mandhailing Aek Gorsing coffee berlokasi di Mandhailing Natal Desa Pahur tepatnya di Aek Gorsing.

Sahlan Nst dan keluarga adalah orang yang pertama bertani kopi di Aek Gorsing Mandhailing Natal dimulai sejak tahun 1997 s/d 2016.

Sahlan Nst Famili hanya mulai memproses kopi Mandhailing Aek Gorsing dengan methode natural proses di 2016. Mereka berkerja langsung dengan petani yang telah mewarisi teknik ini dari generasi sebelumnya, dan sangat cepat menyempurnakannya.

Hanya cherry yang terbaik dan matang sempurna yang dipilih untuk dirposes dengan metode natural proses. Untuk proses pencucian cherry menggunakan air sungai Aek Nabara yang artinya sungai merah jernih. Lokasi penjemuran dari kebun berjarak sekitar 5 jam perjalanan darat. Dalam proses penjemuran coffee Mandheling Aek Gorsing ini hanya membutuhlan waktu 14 hari dengan sinar matahari sampai cherry kering dan kadar air hingga 11%, tetapi tergantung kondisi cuaca.

Mandhailing Pagur coffee ini dikategorikan specialty Nusantara coffee, kerana proses pengupasan kulit cherry masih menggunakan alat tradisional lesung dan sama sekali tanpa proses mesin.

Dose (gr) : 20 gr

Water (ml) : 260 ml

Temp (C) : 87 C

Time (mins) : 2.00 menit

Dengan rasio 1 : 13/ 20 g coffee powder : 260 ml air dengan suhu 87 C dengan waktu seduh 2 menit dengan level roasting cinnamon roast, coffee ini akan menghasilkan karakter apple like sour, citric fragrance, sweet mellow, medium acidity, low body dan clean aftertaste.
